Lucky Pancakes with Pot of Gold Sauce

Pulling out the food coloring for St. Patrick's Day to dye this stack green!

It's the day after St. Patrick's Day and I'm still thinking about these pancakes... they turned out perfect! I was by myself and had a busy work morning, but added some festive food items into my day to put a little Irish luck in my life. Before my workout, I had a nice green matcha latte to start off the green theme. I smashed it at the gym hitting new a new personal record on the bench press and making gains on every exercise in my set. Gains like that are rare, so I wanted my post workout meal to be a real celebration of that success. On the drive home I decided that I wanted to keep with the green theme and thought about doing green oatmeal, but instead decided on these glorious green pancakes.

I've recently been experimenting with different types of sauce for my pancakes. Instead of packing protein into the pancakes, I've found that it works well to utilize protein powders in the sauce. To make a simple nutty protein sauce, simply take a protein powder and blend with banana, soymilk, and powdered peanut powder. You could also let the fruit in the sauce dictate the flavor. Eliminate the powdered peanut butter and try blending in chia seeds instead. Let the berry sauce sit overnight for a more jelly like consistency.

This stack is grain free, vegan, dairy free, and gluten free. Feel free to experiment with any pancake mix though, just follow the mix to water ratio on that box. The high fat content in this recipe comes from the grain free pancake mix which uses nut flours. I had my stack with a craft stout for the holiday. For a booze free pairing, try a coffee with coconut milk, cinnamon, vanilla extract, and almond extract. This will mimic the taste of Bailey's Irish Cream for an alcohol free Irish Coffee.

VEGAN GRAIN FREE LUCKY PANCAKES WITH POT OF GOLD PROTEIN SAUCE

Ingredients:

Instructions:

  1. Mix the Chia Seeds with 2 Tbsp of water and stir till they thicken to a jelly. This replaces the need for an egg that the mix calls for.
  2. Mix the Pancake Mix and 2/3 Cup of the Soymilk.
  3. Mix in a few drops of food coloring until desired color is reached.
  4. Spray a large pan with cooking spray and heat to medium high.
  5. Blend together the remaining Soymilk, the Banana, PB2, Pea Protein, and Vanilla Extract. I use a Nutribullet for this part but turn it off pretty quickly since this is such a small amount to blend. If you don't have a high powered blender, you can always mash the banana and mix in the other ingredients until smooth as possible.
  6. Spoon the mix into the pan and flatten a little with the back of the spoon. This mix is pretty thick so you need to form the cakes. This recipe makes three 5 inch pancakes.
  7. Cook until golden and then flip. They puff up nicely, but take a little longer than traditional pancakes to cook.
  8. Plate by placing a cake down, spooning on some sauce, and sprinkling some chocolate chips. Stack em' up, sauce em' up, and eat em' up.
