Balsamic Pasta - Vegan Recipe

BALSAMIC PASTA RECIPE

Flavor packed! This dish utilizes chickpea pasta for way more protein than a typical pasta. Sweet and tangy balsamic gives a ton of flavor without unhealthy fats. Easy and versatile, add whatever veggies are in season.

INGREDIENTS

  • 3 oz Banza Chickpea Pasta

  • 1 serving Morningstar Fake Chicken Strips

  • 3 cups Spinach

  • 1 cup chopped Portabella Mushroom

  • 1/3 cup chopped bell pepper

  • 1-2 tbsp Balsamic Vinegar

  • 1 tsp Italian Seasoning

  • 1 tbsp Coconut Oil

  • Salt and Pepper to Taste

  • 1.5 tbsp Nutritional Yeast

HOW TO MAKE IT

  1. Bring a pot of water to boil. Once water is boiling, add noodles.

  2. Heat a pan on medium high

  3. Add the veggies (except spinach) and fake chicken to the lightly oiled pan.

  4. Season with Italian seasoning, salt, and pepper.

  5. Stir the pan as needed, cooking everything through.

  6. Towards the end, add the spinach on top on everything in the pan. Pour a little water into the pan and let the spinach steam down. Once softened, stir through and turn the pan down to low.

  7. When the noodles are done, strain and add to a bowl.

  8. Mix the hot noodles with coconut oil, balsamic vinegar, and a little salt and pepper.

  9. Place the contents of the pan into the bowl and mix with noodles.

  10. Sprinkle nutritional yeast on top.
